Meet the Maitake Mushroom!

Meet the Maitake Mushroom!

Exotic mushroom lovers, we’d love your input. Nouvelle is considering adding a brand new mushroom to our range!

Maitake mushrooms (commonly known as “Hen of the Woods“) have been used as medicine in Japan for centuries. Modern research has shown that these mushrooms have a significant and marked effect on combating many types of cancer. They’ve also been proven to lower blood pressure and cholesterol. As a result of their incredible health properties, this exotic mushroom is renowned worldwide and has become increasingly sought after.

The Japanese name “maitake” literally means “dancing mushroom.” According to a Japanese legend, a group of Buddhist nuns and woodcutters met on a mountain trail, where they discovered a fruiting of Maitake mushrooms emerging from the forest floor. Rejoicing at their discovery of this delicious mushroom, they danced to celebrate! It is also referred to by the English name “Hen of the Woods”, since its frond-like growths resemble the feathers of a fluffed chicken.

These extraordinary mushrooms have an intense woodsy, smoky flavour. You can use the versatile Maitakes wherever you would use any other mushroom, such as in omelettes, pastas, salads, stir-fries, soups, risottos, braais and pizzas.

HAVE YOUR SAY! We are inviting our restaurant clients and retail customers to let us know if you’d love us to produce these mushrooms. Post to our Facebook page, tweet us, or send an email. We look forward to hearing from you!
