Nouvelle Mushrooms was conceived by MD Schalk de Beer, an expert in food technology with an interest in optimal health.

Forming a partnership with CNC Exotic Mushrooms in the Netherlands, Schalk spent two years devising the technology to grow exotic cultivars in South Africa. A unique substrate was formed and is now made by bulk compost using natural, local, renewable raw materials.

The supplier of choice to the restaurant, hotel and catering trade, Nouvelle Mushrooms is also listed nationally with Woolworths, currently supplying Shiitake, King Oyster, White Shimeji, Brown Shimeji and Exotic Mix daily.

As the only local large-scale producer, Nouvelle Mushrooms is the sole source of same-day harvest exotic cultivars in commercial quantities.

Stellenbosch operations

Modern Composting Facility

Nouvelle’s modern composting plant was commissioned in June 2008. Highly automated, the plant was built to conform to CNC Exotic Mushrooms’ strict guidelines for design.
The plant produces the material used for the spawning and growth of our range of exotic mushrooms.

Incubation, Growing and Packing Facilities

The Caledon farm is where the bulk of the action takes place. Here the mushrooms are incubated, harvested and packed.
A new Shiitake incubation store was commissioned in April 2008. This was purpose designed and built to comply with Woolworths’ standards; from growing, harvesting and packing to cold storage and supply. Nouvelle Mushrooms is GlobalG.A.P accredited (GGN 4050373294090).
Presently the farm is producing fresh exotic mushrooms at a rate of 1400kgs per week.

Import Activities

Incubation, Growing and Packing Facilities

To compliment our own local production, Nouvelle has embarked on the importation of world-class quality mushrooms in line with our own exacting standards. To this end we have entered into an agreement with the only GlobalGAP producer in the People’s Republic of China.

We now import freshly picked mushrooms through a carefully selected airfreight route to cold store warehouses at both OR Thambo International as well as Cape Town International Airport. This has allowed us to add both white and brown shimeji mushrooms as well as enoki mushrooms to our basket of mushrooms.
