Dried Shiitake mushroom

Dried Shiitake Mushrooms SlicedShiitake Mushrooms are ideal for drying because of its good texture and slight aroma. When reconstituted, it regains the cartilaginous quality of the fresh fungus, so is ideal for soups and dishes requiring some texture.

TO RECONSTITUTE:

Soak in lukewarm water for 30 minutes before preparing as directed in the recipe. Use the soaking water (after straining through a fine sieve) for added flavour or as stock. Dried mushrooms may be added as they are when cooking soups and some sauces, as they revive during the long, slow cooking.

Dried Porcini mushroom

Dired Porcini MushroomsDrying captures and preserves the taste, aroma and texture of mushrooms, but very few retain their shape after they have been reconstituted by soaking in water. Boletus Edulis or Porcini mushroom has the perfect texture for slicing and drying, intensifies in taste when dried and reconstitutes well.
